Chef Tim’s 11 Vegetable Stir Fry with Cauliflower Rice

Eating more fruit and vegetables is a delicious way to start improving your heart health. Many vegetables are great sources of vitamin C and beta-carotene (vitamin A). These nutrients perform as antioxidants and help prevent the buildup of plaque from cholesterol in the arteries. Centra’s Executive Chef Tim created this recipe with 11 types of veggies ensuring a full boost of vitamins and fiber.


  • 1 large head cauliflower, grated (or “riced”)
  • Salt & Pepper, to taste

For Stir Fry

  • 1 tablespoon olive oil
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 2 yellow squash, sliced
  • 2 zucchini, sliced
  • 1 eggplant, diced
  • 1 green Pepper, sliced
  • 1 cup button mushrooms, sliced
  • 1 cup shredded carrots
  • 1 cup water chestnuts
  • Salt & Pepper, to taste


  1. Grate the cauliflower
  2. Season with salt and pepper and set aside
  3. Cut all vegetables to your desired size and set them aside in a bowl.
  4. Preheat a large skillet with the olive oil on medium/high heat. 
  5. Add garlic and onion and sauté for 1 minute.
  6. Add in the riced cauliflower and sauté for 2 minutes
  7. Slowly add in vegetables and sauté, stirring constantly, until vegetables are cooked, or 4-5 minutes.
