Chef Tim’s Heart Month Zoodle Salad Recipe
In honor of Heart Month, Centra’s head chef, Chef Tim Schoonmaker, produced a number of original recipes that highlight heart-healthy ingredients. The second recipe in his heart-healthy series is a Zoodle Salad. Zoodles are noodles made from zucchini but can refer to any julienned vegetables. This flavorful, low carb meal is easy to make. Feel free to substitute other veggies and flavorings. Try this recipe in your own kitchen and share your results!

Zoodle Salad (Gluten-Free)
Heart Healthy, Low Fat, Good Fiber, High in Vitamins & Minerals
- 2 Zucchini, spiralized
- 2 Yellow squash, spiralized
- 1 Tomato, diced
- 1 Cucumber, peeled, diced
- 1 cup Broccoli, blanched and chopped
- 1 Carrot, shredded
Mix together all of the vegetables in a bowl and set aside.
For the Vinaigrette
- 1 cup olive oil
- ½ cup balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon salt-free seasoning
In another bowl, whisk the olive oil and vinegar together. Mix well until combined. Then, whisk in the mustard and seasoning.
Combine the vinaigrette with the vegetables and serve.
