Chef Tim’s Black Bean Muffin Heart Month Recipe
In honor of Heart Month, Centra’s head chef, Chef Tim Schoonmaker, produces a number of original recipes that highlight heart healthy ingredients. The first recipe in his heart healthy series is a black bean based chocolate muffin. These gluten free treats are a sweet substitute for those morning pastry cravings. Try this recipe in your own kitchen and share your results!
Black Bean Muffins (Gluten-Free)
Makes 12 muffins
Heart Healthy, Low Fat, Good Fiber, Protein (4 Gram)
- 1 15 oz can- Black Beans, rinsed, drained
- 3 eggs (you can substitute egg whites)
- 1 banana
- 1/3 cup honey
- 1 teaspoon vanilla extract
- ½ cup cocoa powder
- 1 teaspoon baking powder
- ½ cup oats
- Handful of dark chocolate chips (add at the end, after baking)
Preheat the oven to 375 degrees, line a muffin tin with muffin cups.
In a blender, mix all of the ingredients together (all at once) and blend until smooth. Be careful not to overmix.
Once the batter is smooth and comes together, place the batter in each muffin cup and bake.
Baking time is 15-20 minutes, or until the toothpick inserted into the center comes out clean.
Once muffins are baked, add the chocolate chips to the muffins and serve.
